Coat with flour and a salt and pepper mix.

Brown in a skillet on both sides in olive oil.

Transfer meat to a shallow baking dish and pour meat drippings over the meat.

Mix a can of stewed tomatoes, ½ cup chopped celery, ½ cup chopped carrots, two cloves of minced garlic and 1 teaspoon of Worcestershire sauce and pour over the meat.

Cover the dish with foil and cook at 350 degrees for two hours.

After two hours remove and cover with shredded cheddar cheese and put back in the oven until the cheese is melted and then serve.
