This steak is nicely marbled and is less expensive than some of the other steaks like tenderloin. When cooked correctly it is wonderfully tender and juicy.

Marinate the steak in your favorite marinade for 24 hours in your refrigerator. Bring to room temperature before cooking.

Sear in a pan with a mixture of butter and olive oil on both sides until you reach your desired doneness.

Remove from heat and let stand for five minutes so the juices set.

Slice and serve.
