A holiday favorite for sure, this roast is a dry heat roast. Great on the grill or in the oven.

Season the outside with a little salt, pepper, olive oil and garlic.

Sear at 500 degrees for 15 minutes

After searing turn oven to 325 degrees and cook for 17 minutes per pound.

Pull roast at an interior temperature of 120 degrees for a rare-medium rare.

Let stand for 10 minutes to allow the juices to set.

Slice for serving in any desired thickness.
